The iPhone’s contact add/edit screen contains a very confusing design decision. I spent 10 minutes Googling for how to add a Home phone number. The trick, it turns out, is to tap the left-side label (e.g. mobile or iPhone in this photo) which brings up a menu to select from.
Not easily discovered, nor found elsewhere in the phone. In past versions of the OS there was a green plus icon in the left gutter along with a button reading ‘Add new Phone.’
